I am a graduate of the Culinary Arts program at Schenectady County Community College.
Over the past 15+ years I have gained extensive knowledge and experience working along side some of the best industry professionals in the Capital Region.
In this, I have developed my own style of baking and pastry work which had culminated in the creation of Nyx; A Scratch Baking Co.
An homage to the man that pushed me to do this and become the best baker I could be, Chris Schloss, former owner of Scratch Bakery Cafe located on Madison near Lark, Scratch was an essential part of my journey and represented as such.

Nyx was, is and will always be a true scratch baking company.
Our history begins with Farmers and Makers Markets, direct sales and a spot at the Lark Street Mercantile (RIP)
Over the course of 2 years we sold enough product at prices averaging $3-4 each to open up the brick and mortar without any outside funding.
And though the road has been rocky one thing I have learned is that scratch baking is a dying art and the way we do it is something special.
And for that reason it is time to explore how to reinvent the business model.
